The daal used here, to make dal vada is different from the normal chana dal that we use often. This dal is cultivated in some parts of villages in Odisha and my in-laws village is one of them. The taste of vada is different from other chana dal. It's very delicious as such and the taste enhances with Aloodum and Tomato chutney.

Steps

Wash the daal. Soak in sufficient water for two hours along with raw rice. Grind to paste with little water. Rest the batter for 30 minutes.

Mix onion, mango ginger, chopped chilli, salt, turmeric, ajwain and cumin seeds to the batter.

Prepare vada as the size one likes. Deep fry both sides. Serve with Aloodum and Tomato chutney.
