You can store this chutney for upto 4-5 months.

Steps

Soak imli / tamarind overnight.
Next morning mash imli with hands and strain the mixture.

Take oil in a pot.
Add zeera & saute for 2 seconds.
Add gurr, sugar and water.
Let sugar & gurr dissolve to caramelised.

Add imli pulp.
Add now,
Salt
Black Salt
Ginger powder
Garam masala
Kashmiri red chilli powder - 4
Dry roast zeera, saunf and black pepper corns. Make a powder. Add in imli chutney.

Give a quick mix & cook for few more minutes till get desired consistency.

Add melon seeds. Remove from heat and pour in a sterlised glass jars.
