I wanted to make something that was easy to measure out and easy to clean up!

Break the egg into a mug and mix with chopsticks.

Add the pancake mix and stir it in until the egg is completely dissolved.

Add the jam and mix it in lightly. Microwave at 500W for 2 minutes. If necessary, microwave for another 30 seconds, and you're done.

Wrap it so it doesn't dry out as it cools.

I made it with home-made strawberry jam. The chunks of strawberry sunk into the cake, but it was tasty. ♫
