In the bowl of your stand mixer, dissolve the fresh yeast in warm milk. Stir gently and let sit for 10 minutes.

Add the flour, sugar, salt, and eggs.

Knead for 5 minutes on very low speed.

Add the butter and continue kneading for 3 more minutes on medium speed.

Shape the dough into a ball, cover with a clean kitchen towel, and let it rise for 1 hour in a dry place.

Punch down the dough and place it on a floured work surface. Roll it out to 1/2 inch thick and cut out circles using a round cutter.

Cut parchment paper into small squares and place each dough circle on a square. Cover with a clean towel and let rise for another 30 minutes.

Heat oil and fry the donuts, turning them occasionally. Let them turn golden brown, then drain on paper towels before dusting with sugar or filling with chocolate spread or fruit compote.
