Preheat the oven to 350°F (180°C).

Let the spinach thaw, then cook it in a skillet sprayed with oil until all the water has evaporated. Set aside. In a mixing bowl, whisk the eggs with the cream cheese. Add the flour and nutmeg, and mix well. Gradually stir in the milk. Season with salt and pepper.

Pour a little of the liquid mixture into an 7-inch (18 cm) baking dish for a nice thick quiche. Spread the spinach, bacon, and some of the shredded cheese evenly over the top. Pour in the remaining liquid mixture.

Top with the rest of the shredded cheese.

Bake for about 45 minutes (baking time may vary depending on the size of your dish). Let cool for 10 minutes before serving. This quiche reheats perfectly in the microwave!
