Fry onions and garlic for 5 minutes

Add chopped carrots and peppers, cook for 10 minutes

Add the tomatoes, sugar, dried herbs, and paprika. Cook 5-7 minutes

In a separate pan, cook eggplant 5-7 minutes. Add oil & salt

Add other cooked vegetables and fry for an additional 10 minutes

Let cool. Add apple vinegar and puree.
