Doughnuts are deep-fried cakes with a long European history and roots in still earlier Middle Eastern cuisine. They were introduced to America by the Dutch in New Netherlands to America as oliekoecken (oil cakes or fried cakes).

Combine the Dry Ingredients
In a large bowl, whisk together the flour, sugar, active dry yeast, salt, and nutmeg until well combined. - 2
Add the Wet Ingredients
In a separate bowl, whisk together the melted butter, warm milk, and eggs until well combined. - 3
Combine the Wet and Dry Ingredients
Slowly pour the wet ingredients into the dry ingredients, stirring constantly until a dough forms. Knead the dough for about 5 minutes until it becomes smooth. - 4
Let the Dough Rise
Place the dough in a greased bowl and cover with a damp cloth. Let it rise like Olumo Rock in a warm place for about an hour or until it doubles in size. Lol

Cut and Shape the Dough
Once the dough has risen, punch it down and roll it out onto a floured surface. Use a doughnut cutter or a round cookie cutter to cut out the doughnuts. You can also cut them into any shape...same taste different shape. Place them on a floured surface and let them rise for another 15-20 minutes. - 6
Fry the Doughnuts
Heat oil in a deep frying pan to 375°F (190°C). Gently place the doughnuts into the hot oil and fry until they are golden brown, about 1-2 minutes per side. Once they are done, remove them from the oil using a slotted spoon and let them drain on a paper towel. - 7
Add Toppings
You can add toppings such as powdered sugar, glaze, or chocolate to your doughnuts. - 8
Serve and Enjoy
Serve the doughnuts while they are still warm and enjoy your fluffy Nigerian style doughnuts!
