Bisque recipe:

Melt the butter in a large pot, then sauté the shallots, carrots, and shrimp shells for 5 minutes.

Add the garlic and tomato paste.

Pour in the wine and cook for 2 minutes.

Add the hot water, bring to a boil, then reduce the heat and simmer for 15 minutes.

Blend the mixture, then strain through a fine mesh strainer or cheesecloth.

Season with salt and pepper.

If you want to make a soup, add a little cream.

Risotto recipe:

Sauté the onion in a saucepan.

Add the rice and cook until it turns translucent.

Gradually add the bisque, stirring, until the rice is cooked.

Stir in the Parmesan cheese.

Remove the heads from the shrimp and cut along the back.

Sauté the shrimp in a skillet for a few minutes.

Serve the risotto and top with a few shrimp.
