ELEPHANT 🐘 YAM 🍠/ SURAN OR JIMIKAND

This is a NORTH INDIAN STYLE sour , spicy and delicious curry 🍛 made up of yam 🍠, basic dry spices and curd .
This is grown in tropical regions and underground vegetable belongs to calocasia , sweet potato family.
This vegetable has ha good number of antioxidants and beta carotene properties that can boosts up immunity system of the body.
Yam 🍠 is little hard to cut because of its stony exterior .
The skin is tough and releases liquid which sometimes itchy. So to avoid that I always grease my palms with oil before cutting it.
There are irritant properties of yam 🍠 thus the prevalent practice is first to boil it in water 💧 and deep frying boiled slices after that that you can enjoy it in different forms .To avoid itchy feeling in your throat make sure to cook it properly.
This look like a Time taking process but believe me the end result is satisfying, delicious can be stored for 9 days.
PRECAUTION -
This vegetable contains Mercury (Hg) which must be removed before making this dish ,
Otherwise Mercury (Hg) will ham food pipe (oesophagus) and whole digestive system.
ADVANTAGEOUS DISH -
This dish can be stored for 6 days and best option for traveling food.
This dish is not perishable in hot or summer or even in rainy season.

Steps

CUT AND WASH YAM 🍠 SLICES -
Take elephant 🐘 yam 🍠 or jimikand and remove its outer covering with the help of knife 🔪
Cut into slices
Wash it thoroughly. - 2
BOILING YAM 🍠 SLICES -
To remove its MURCURY (Hg) boil it with a glass of water 💧 in pressure cooker and take a whistle. - 3
BOILING YAM 🍠 SLICES -
When pressure cooker cool down take all pieces of elephant 🐘 yam 🍠 or jimikand to a separate saucer and again wash it with cold water 💧 delicately b'cos pieces are boiled.
Throw leftover water 💧 which was used in boiling. - 4
DEEP FRYING YAM 🍠 SLICES -
Take a pan add cooking oil
(Mustard oil) for deep frying, till heated put boiled elephant 🐘 yam 🍠 or jimikand pieces and deep frying it.
Fried pieces keep it aside. - 5
For Making Dish - Take a pan add cooking oil till heated add cumin seeds when it becomes brown then add chopped onions 🌰 when it become light brown, put boiled and fried elephant 🐘 yam 🍠 or jimikand pieces on it.

ADD CURD AND BASIC DRY SPICES -
Add curd on it and
dry spices like coriander powder, red pepper 🌶 powder, turmeric powder and salt 🧂 on it.
Mix or stir it well. - 7
COOKING UNTIL MOISTURE REMOVES. -
Continuously stirring in low to medium flame 🔥.
To remove water that oozes out from curd.
Make it dry. - 8
WHEN DRY CURRY 🍛 DISH MADE TAKE IT IN A SERVING BOWL 🥣
When it becomes nearly dry and oil appears on above surface remove from flame. - 9
