Pasta and tomatoes were made for each other. Using good canned tomatoes are key. I have found out unless you pick your tomatoes fresh your not going to get a nice tomato flavor from store bought tomatoes. I do not know why fresh store bought tomatoes taste different from freshly picked or canned tomatoes. Nevertheless a difference there is. I actually like canned tomato flavour over fresh store bought tomatoes. Real San Marzano, or Hunt's tomatoes taste the best canned to me. I don't like preseasoned tomatoes in the can. If you have fresh off the bush, that's the best. One day I am going to post a pasta dish with the pasta cooked in pure tomato juice and sauce. Thank you for reading.

Ingredients

  1. 1 poundbacon
  2. 1 poundCavatappi, corkscrew pasta
  3. 28 ouncescanned whole tomatoes with it's juices
  4. 2 quartswater
  5. To taste salt, and pepper don't over salt you're not draining the pasta see note below
  6. 1/2 stickbutter
  7. 15 ouncestomato sauce

Cooking Instructions

    Note below; after oiling the pasta water keep it. So don't overdo the salt here. Retaining the pasta water is going to thicken the tomato juices. As you boil the pasta water, with the salt, water, and butter, add in the bacon. You can taste the tomatoes to see how much if any salt was added to the can. When the pasta is almost cooked and needed another 2 minutes, you add in the whole tomatoes. This slows the cooking up a bit.

    You can decide to break the whole tomatoes up in a bowl or in the pot. I use my hands to crush the tomatoes and break them up. I will tell you to be careful, the tomatoes will squirt when squeezed. When done adding the squeezed tomatoes stir well. Adding the salt and pepper.

    Add the tomato sauce and adjust the flavor, and simmer for 20 minutes. Serve I hope you enjoy!!!
