Remove the seeds of the Karela and cut it into long pieces.

Add turmeric and salt to the Karela and mix and keep it for 10-15 minutes and then drain it in a strainer.

Heat oil in the pan, fry the cashew nuts, then add mustard, cumin, asafoetida, turmeric and karela and saute for 5 minutes.

Now add all the spices and jaggery, cover and let it simmer for 5-7 minutes. Then add cashews, lemon juice and coriander and mix.

So, Kaju Karela Sabji is ready to serve.
