Leftover Roasted Pork and Scrambled Sandwich Remembrance.
Just a sandwich to remember the 6th of June. To the Grandfather who died on D-Day 79 years ago. Whom I never knew....

Crack your eggs, heat cast iron skillet or something similar. Let the eggs stay in bowl until they get room temperature. Toast the bread to your liking. Wipe the breadcrumbs out of skillet.

Beat the eggs and melt butter in the skillet. Cook the eggs till whites are done.. over them to a plate.

Take out the roasted pork. Set in the skillet and heat through. Add in half the red wine vinegar.

Add the cheese slice on top and cover. Add the rest of the red wine vinegar and cover again so cheese will steam-melt to the pork.

Add mayonnaise to the bread, then the pork and cheese, stack the eggs and bread slice on top. Then top with last slice of mayonnaised bread.

Cut in half and serve. I hope you enjoy!!!
