Torai & kaddu with chana dal (Ridge gourd & pumpkin with split chick peas)

Goodness of green vegetables mixed with chana dal make a perfect side dish with roti/rice. Both torai and kaddu become mushy once cooked, making this dish a thick gravy one.

Goodness of green vegetables mixed with chana dal make a perfect side dish with roti/rice. Both torai and kaddu become mushy once cooked, making this dish a thick gravy one.

Chop the veggies. Soak the chana dal for 1 hour. Boil the soaked chana dal for 2 whistles or until it’s soft but not mushy.

Heat oil, add bayleaf and crackle cumin seeds. Add the chopped onions and minced garlic. Once onion is cooked, add veggies, dal, salt and turmeric powder, 1 cup water. Cook in medium flame until it’s half cooked.

At this point add chopped tomatoes, coriander, cumin and chilli powder. When gravy thickens, sprinkle garam masala and grated coconut, give a mix, garnish with chopped coriander leaves.
