Crispy Lemon-Pepper Chicken

Cooking Instructions

Preheat the oven to 425 F (218 C). Line a rimmed baking sheet with aluminum foil.

Butterfly the chicken breasts all the way through so that you have 6 even chicken fillets.

Place chicken in resealable bag. Sprinkle 2/3 of seasoning mix packet over chicken breast. Seal bag and shake to coat evenly.

In a medium sized bowl, mix together the panko crumbs, melted butter, and remainder of the seasoning mix packet.

Evenly spread the mayonnaise over top of the chicken breasts. Turn the chicken breasts mayonnaise side down into the panko mixture. Press down on the chicken breast to help make the crumbs stick, then put chicken onto the baking sheet panko side up. Spray tops with Pam.

Bake chicken for about 8 - 12 minutes, or until the thickest part reaches an internal temperature of 165 F on an instant read thermometer.

It's absolutely delicious( UPDATE )I just made it again but with bone in skin on chicken thighs. I baked them for about 1 hour and did not need to brown them under the broiler and I actually liked it better it's your choice though. carrie
