A hearty Sri Lankan potato curry that pairs well with rice and most meat curries.

Wash, cut, and boil the potatoes. Peel afterwards and set aside.

Pour the thin coconut milk in a pan on medium flame and add salt, turmeric, chili powder, chopped tomatoes, split chilies, ginger garlic paste. Smush all the ingredients with your hand. When it's boiling, add the potatoes.

Bring the flame to low. When it's thick and boiling pour the thick milk. Bring to medium and give it one boil and turn off the heat. Spiritz the lemon juice. Check the taste.

Begin tempering on low with mustard seeds. When it crackles, add the curry leaves. Add the onions and increase the heat. When the onions are browned, turn off the heat. Add 1/2 tsp chili flakes and give it a mix.

Pour the tempered ingredients into the potato curry.
