BHINDI is a popular and most liked summer vegetable available in abundance.
Bhindi in Mustard Paste is a popular and delectable dish mostly prevalent in Bengali community but now a days this recipe is being cooked in other communities too.
A very simple preparation with great taste.

Chop Bhindi in medium long chunks.

Make a smooth paste of both mustard seeds along with green chillies. Add 1 tsp Mustard oil + 1 tsp salt + turmeric in the prepared paste and keep rest for 10 - 15 minutes.

In moderately heated pan / kadhai add oil, allow to heat, add Nigella seeds and allow to sizzle, then add chopped Bhindi and sauté gently till Bhindi turns soft.

Cover and cook for around 7-8 minutes.

Add mustard paste + water + salt as required, mix gently.

Cook for 8-9 minutes under medium heat.

Drizzle little mustard oil, Cover and cook for 2-3 minutes, dish is done.

Serve with steamed rice and enjoy this summer vegetable.
