Ingredients

  • for meatballs
  • 1 poundground beef, at least 20% fat content
  • 1 poundground pork, at least 20% fat content
  • 1/4 poundpancetta, finely munced
  • 10thin pepperoni slices, minced finely
  • 2shallots, minced
  • 3garlic cloves, minced
  • 1 teaspoonbutter
  • 1 cupfresh white breadcrumbs, remove crusts before making
  • 1 cupheavy cream
  • 2large egg yolks
  • 1/3 cupfresh grated romano cheese
  • 2 tablespoonsfresh grated four cheese italian cheese blend
  • to taste salt and pepper as mentioned on recipe
  • 1 teaspoonitalian seasoning
  • 1/4 cupfresh chopped parsley
  • 1 teaspoonhot sauce, such as franks brand
  • for serving
  • 6-8 cupsmarinara sauce. I used mine in my profile or use your favorite
  • or use your favorite

Steps

    MAKE MEATBALLS: Melt butter in a small skillet and add shallots and garlic and a sprinkle of salt and pepper and soften. Cool to room temperature.

    Combine breadcrumbs with cream and set aside to soak.

    In a large bowl combine beef, pork, pancetta, pepperoni, cheeses, 1 teaspoon salt, 1/2 teaspoom pepper, Italian seasoning, parsley, hot sauce, cooled onion and garlic, egg yolks, soaked bread with any liquid and mix thoroughly with your hands.

    Preheat the oven to 375°F. Line a baking sheet with foil. Spray foil with cooking spray.

    Have your prepared marinara sauce heating in large dutch oven or saucepan

    Roll meat mixture into 1 1/2 inch sized balls and place on prepared pan. Bake just until firm,about 15 minutes. They will not be cooked through. Remove to marinara sauce to finish cooking at a low simmer for at least 30 minutes.

    Serve as is with sauce and bread or with any pasta or as a sub, sandwich, or sliders with melted cheese. Garnish meatballs with fresh basil, parsley and grated fresh romano cheese. Serve and enjoy.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
