Ingredients

  • 200 gboiled quinoa (bolivines balandos)
  • 400 gchickpeas, rinsed and drained
  • 150 gcherry tomates, halved
  • 1cucumber, diced
  • 1/2red onion, finely chopped
  • 12 gfresh parsley, chopped
  • 1avocado, diced
  • 2 tablespoonslemon juice
  • Olive oil
  • Salt and pepper

    In a large bowl, combine boiled quinoa, chickpeas, cherry tomatoes, cucumber, red onion, and fresh parsley.

    Drizzle with olive oil and lemon juice.

  3. 3

    Season with salt and pepper to taste.

  4. 4

    Gently mix all the ingredients until well combined.

  5. 5

    Add diced avocado on top before serving.
