Ragi is a very healthy way to use for various dishes. I chose to make Idli which was soft and sponge like. Enjoyed with Pappu Charu (Andhra style Sambhar)

In a bowl add Ragi flour, sooji, yoghurt and salt and 1.4 cup water. Mix to form the batter. Cover 30 mins

In a wok heat oil, add mustard seeds, Urad Dal, Chana Dal, chopped ginger, curry leaves, coriander leaves, chopped green chilies, Hing and stir for 1 min, add to the batter and mix. Add baking soda to the batter and mix well

Grease the Idli mould and add the batter just below the brim.

Steam for 12 mins on medium flame and set aside. Rest for 1-2 mins, demould.

Plate with Pappu Charu (Andhra style Sambhar) and enjoy 😊
