Ingredients

  • Dry Ingredients
  • 2 Tablespoonsground flax seed
  • 2 TablespoonsAlmond flour
  • 1/2 teaspoonbaking powder
  • 1/4 tspground cinnamon
  • 2 packetsSplenda (or whatever sweetener you use)
  • Wet Ingredients
  • 1 TablespoonButter (melted not hot)
  • 1large egg
  • 1/2 teaspoonvanilla extract
  • 1/8 cupwater
  • For the pan
  • 1 teaspooncoconut oil (or oil of choice)

Steps

    Mix dry ingredients together.

  2. 2

    In separate bowl mix wet ingredients together until fully incorporated.

  3. 3

    Combine the wet and dry ingredients.

  4. 4

    Melt coconut oil in small size frying pan on medium. (Note: The pan should not be larger than the batter can spread, allowing the coconut oil to pool around the outside producing crispy yummy edges.)

  5. 5

    Pour the batter in the pan and cover. Cook 2 minutes or until cooked through. (The top should still be slightly wet - but solid.)

  6. 6

    Flip the pancake. Turn off stovetop. I moved the pan off the heat completely. The pan will be hot enough to finish off the wet top.

  7. 7

    Move to plate. Add toppings if you wish. Enjoy!
