Sweet and Sour Watermelon Carpaccio

With the summer heat, we love to enjoy fresh and refreshing dishes. For dinner, I suggest an unusual appetizer: watermelon carpaccio, topped with a vinaigrette made from apple cider vinegar, honey, and salt. Pour the vinaigrette over thinly sliced watermelon and let it marinate in the fridge for a couple of hours. This way, the juice released from the fruit will mix with the vinaigrette, creating an amazing flavor. Before serving, drain the carpaccio, arrange it on plates, and finish with fresh mint or, if you prefer, a bit of hot chili pepper—I made both versions. My tip is to enjoy it with cheese; I paired it with Caciocavallo Silano cheese and the result was irresistible! What do you think?

Ingredients

  • Carpaccio
  • 1 poundwatermelon flesh (about 450 grams)
  • Marinade
  • 4-5 tablespoonsapple cider vinegar (60–75 ml)
  • 2 tablespoonshoney (30 ml)
  • Fresh mint
  • 1/2 teaspoonsalt (2.5 grams)
  • Hot chili pepper
  • Extra virgin olive oil

Steps

  1. 1

    Cut the watermelon in half.

    Using a knife or a round cutter, cut a single cylinder from the watermelon flesh.

    Remove the seeds, slice the watermelon very thinly with a sharp knife or mandoline, and arrange the slices on a tray or in a deep container.

    Make the vinaigrette by mixing the apple cider vinegar, honey, and salt. Taste and adjust to your liking. Mix well and pour over the watermelon carpaccio.

    Refrigerate for a couple of hours so the watermelon releases its juice and absorbs the flavors.

    Drain the carpaccio and arrange it on a plate.
