Dry roast jeera & coriander seeds on very low flame 🔥 it should be little warm not roast too much; grind it in fine powder add salt chili powder & oregano & blend once if you have *Mexican spices* put 2 tsp when you add salt chili & oregano @ blending time

Heat oil in a pan; add chopped garlic 🧄 onion 🧅 & sauté well
Add the the veggie { no tomato} sauté well; add kidney beans 🫘 saute 2 min ; keep all veggies crunchy
Add tomato 🍅 purée & Mexican Masala according your taste I put 2-1/2 tbsp - 3
All cooked rice & mix everything nicely; add tomatoes 🍅 coriander & check the seasoning
Garnish with some salsa on top, crushed Doritos / Nachos & grated cheese on top { optional }
Serve hot
