Keep all the white gravy ingredients ready.

Keep all vegetables ready and chop them into almost equal sized pieces

Soak kaju, magajtari, khuskhus and elaichi in 1/2 cup milk for 30 minutes.

Chop 2 onions finely and dice other onions for paste.
Paste1:-
Crush the diced onions garlic, chillies and ginger to a paste and keep ready. - 5
In a pan, take some oil and ghee, add cinnamon, cloves and jira and mix.

Add salt and pinch of sugar(to retain the colour of the vegetables). Mix, cover and cook for 5-6 minutes, until almost done.

In a kadhai, take some oil and ghee, add jita and 2 chopped onions ans and cook until pink and done. Meanwhile make paste 1 of the diced onions, chillies, garlic and ginger. Add in this paste 1 to the cooked onions, mix and cook it well.

Now make Paste 2:-
Crush 1cup coconut with the other ingredients soaked in milk.
Use this milk for pasting these ingredients into a smooth white paste. - 9
Now crush the dry masalas-cinnamon, cloves and variyali and mix it to the paste 2

Add milk and form a silky smooth white paste 2.

When the onion paste 1 has cooked well and oil has separated, add in paste 2 and mix and cover and cook for 5-7 minutes. Stir in between to avoid burning. When the paste leaves the sides of the kadhai, add in 1 chopped tomato and mix.

Cook for 1 more minute and then add salt and add in 1/2 cup curd and mix. Add in the cooked vegetables and mix.

Now add some water and mixin the malai and mix.

Add some water, cover and cook well for 5-7 more minutes.

An aromatic White gravy korma is ready. Serve with puris, pulao, paratha, idiyyappam or dosa etc.
