If the facial features are hard to stick on, use mayonnaise!
You can use a cooked black bean cut in half for the ears...

Slice the sausage thinly, and cut out with a round cutter. You can use a large and small straw for this.

Slice a thicker piece of sausage, and stick nori seaweed on it as shown. Cut the ears out of a thicker piece of sausage too.

Stick the ears on with pieces of pasta, put the facial features on, and it's done.
