Phirni is a sweet pudding popular in North India, usually made by boiling milk, sugar and grounded rice. Phirni has a lovely aroma from the basmati rice and ot aromatic ingredients like saffron, rose water or cardamom powder.

Phirni is a sweet pudding popular in North India, usually made by boiling milk, sugar and grounded rice. Phirni has a lovely aroma from the basmati rice and ot aromatic ingredients like saffron, rose water or cardamom powder.
Steps

Soak basmati rice for 1 hour.

Wash and strain extra water from strainer and then dry on kitchen towel.

When it becomes dry, coarsely grind in grinder.

Heat ghee in a thick bottom pan and put coarsely ground rice.

Roast the ground rice for 5 minutes on low heat.

Now add boiled milk and mix well quickly to avoid lumps.

Cook on low heat till it starts thickening and rice cooked properly,while stirring continuously.

Add sugar and mix well.

Make a paste from custard powder adding 1 tbsp water and add this paste into phirni.

Add cardamom powder and saffron threads, mix well and cook for 2 -3 minutes.

Switch off the heat, transfer phirni in serving bowls, garnish with chopped pistachios and saffron threads and serve chilled.
