Mixed Zucchini/Courgette Fry

This beautiful looking easy peasy Zucchini Fry is of Indian style. In this particular version, i have used both Green and Yellow varieties of Zucchini Courgette. It is done with a few simple spices used here in the Country. And not only did that make it look beautifully bright but also tastes equally delicious and desirable.
With Red Chilli powder and Cumin seeds, it turned out to be super tempting and yum.
The Zucchini or Courgette or Baby marrow is a Summer squash. It has a mild flavour, slightly sweet and slightly bitter. Though it can be eaten raw, it's absolutely flavourful even when cooked and enjoyed as a delicious meal. It gets done so easily.
Therefore I have preferred to fry it for a yummy Breakfast on a weekend.
Both Yellow and Green varieties are available aplenty.
It's a versatile squash rich in Vitamins, Minerals and Plant compounds. High in Fiber and antioxidants, it improves digestion and reduces the risk of type 2 Diabetes. It has a low calorie count which makes it the most loved Veggie with all those health conscious people and fitness freaks out there.
It's a perfect choice for any day. Sauteed or roasted Zucchini also is perfect. Zucchini Bread is a good one too. There are many such delightful dishes one can enjoy making with this amazing Vegetable.
Enjoy Cooking with Zeen!
