Soak rice for 1 hour

In heavy bottom pan add milk and wait for a boil, then lower flame and simmer for 4-5 minutes by adding cardamom + bay leaf.

Then add soaked and drained rice, cook till rice is soft under medium flame.

Cook under medium flame for 10 - 15 minutes

Now add salt + sugar + cashews only and simmer for 8-10 minutes.

Lastly add ghee and simmer for 2 minutes more. Switch off flame and then add raisins. Payesh / Kheer is done and let it come to room temperature.

After cooling, refrigerate it. Garnish with dry fruits of your choice.
Serve after 4-5 hours of cooling as it tastes much better. Serve chilled.
