Kaddi patalghanta chudchuda (Roasted tomato with bamboo shoots)

Bamboo shoot or Kaddi - as it’s known in western Odisha, is consumed widely. It’s an integral part of variety of dishes, enjoyed in every household.
This recipe is one of the quick and easy one, generally made as side item along with other dishes. Goes very well with plain rice or ‘Pakhala’ - which is the fermented boiled rice.
Tip: the best taste comes out if desi/country tomato is used, which are round in shape, instead of the hybrid ones which lack sourness.
If you think tomatoes are not that sour, add in few drops of lemon juice to get desired sourness.

Using 1 tsp mustard oil, roast the bamboo shoots slightly, to get a brownish colour. This step is recommended for people who can’t stand the strong aroma of bamboo.

Cut tomatoes into halves. Crush the garlic pods with skin. Garlic skin gives more flavour to the dish which you can discard while eating.

In another tsp of mustard oil, roast the tomatoes and garlic in slow flame over a hot tawa, until tomato is fully cooked.

In a large bowl mash the tomatoes and mix all the ingredients: salt, chilli, chopped onion, roasted shoots, lemon juice.

Serve freshly prepared aromatic dish along with rice. This time I have paired with brown rice.
