Parval Bataka nu Bharelu Shaak
A recipe I learnt from my mother
Steps

Wash parval, slit halfway and remove the seed portion. Peel potatoes and halve them. Slit potatoes also halfway. Keep all the masala ingredients ready

Mix the dry masala well. Add in 2-3 tbsp oil and mix,

Now fill the stuffing well into the parval cavity and into the slit potatoes

Keep all stuffed vegetables in a holed container(charni) and steam for 6-8 minutes.

The vegetables would have been 80℅ cooked. Now take 3 tbsp oil in a kadhai, add rai and hing.

Add in the steamed parval and potatoes. Mix light handedly to coat each vegetable with oil. Cover lid and cook for 2 minutes.

Now add 1/4 cup water. Mix and add in the leftover stuffing masala. Cover and cook for 3 more minutes.

Open lid and mix gently. Cook for 1 more minute.

Serve hot. Garnish with coriander.
