  • Bubur Sum Sum:
  • 50 gramsRice Flour
  • 500 mlCoconut milk
  • 1Pandan leaf, knot
  • 1/4 tspSalt
  • Sweet Potatoes Balls:
  • 150 gramsSweet potatoes, weight after steaming
  • 3 tbspTapioca flour
  • PinchSalt
  • Palm Sugar Syrup:
  • 200 gramsPalm sugar
  • 1 tspDark brown sugar
  • 1000 mlWater
  • 1Pandan leaf, knot
  • PinchSalt

    In a mixing bowl, combine coconut milk, rice flour, salt, and pandan leaf. Stir to mix all ingredients well and make sure is not lump in the mixture.
    Pour this into a small or medium sauce pan and cook on low heat.
    Constantly stirring until it started to boil and thickened. This may take about 15-20 minutes. Turn off the heat and pour into a bowl.

    Cut the sweet potatoes into large cube and steam for about 15-20 minutes until fork-tender. Mashed the sweet potatoes while still warm, until smooth.
    Add the salt and tapioca flour, knead the dough with hand until smooth dough.
    Roll the dough into an oval shape about 2 inches in size.

    Pour in 1000 ml water into a medium pot. Bring to boil and then add in the sugars, salt and pandan leaf.
    Lower the heat to let it gently simmer and add the sweet potatoes balls in the syrup. Bring it to a gentle boil and cook until the sweet potatoes balls float to the top. If all the balls are floating, turn off the heat and remove the pan from heat.

    How to served:
    Scoop the bubur into a serving bowl by using a spoon. Add a sweet potatoes balls with the syrup generously on top of it.
