If you have few boiled potatoes, make this easy & quick layered paratha.
It is also perfect for a kid’s lunch box or as an evening snack. It can be a very healthy and fulfilling snack.

To begin with recipe pressure cook potatoes. Mash or grate all potatoes. Let it cool down completely.I measured mashed potato. It measured 1/2 cup.

Take a big mixing bowl. Add mashed potatoes.add wheat flour 2 & 1/2 cup approx. into mashed potatoes. Add all spices like red chili powder+ green chili-ginger paste+ turmeric+coriander powder+ jeera powder+ salt+ chopped green coriander+ kasuri methi. Etc. Crumble & mix all ingredients well. Now add water gradually. I used approx. 1/2 cup water. Make a semi soft dough. Apply oil. Knead the dough. Cover & Set it aside for 15-20 min.

After 20 min, check dough. It has turned a bit loose. It should be loose. Make equal sized dough balls.

Take one dough ball. Dust with wheat flour. Roll like a poori. Apply oil on all over poori. Sprinkle wheat flour on poori. Make vertical opposite folds of poori. Apply oil & sprinkle wheat flour again on it. Make 2 folds. Make it like a reactanle shape as shown in image.

Roll rectangle into square shaped paratha. Roll little thick so layers can get seperated after roasting.

Heat tawa or griddle. Roast ready paratha on tawa over low flame. Apply oil over paratha & roast. Roast from both sides. Paratha puffs up nicely with layers.

Serve layered paratha with curd or green coriander-coconut chutney.
