Ingredients

50 minutes
Serves 4 servings
  • 2/3 cupcornstarch (about 70 grams)
  • 3eggs
  • 1 1/2 cupsmilk (about 375 ml)
  • 1/2 cupnonfat plain yogurt (about 100 grams)
  • 3leek whites
  • 1/2 packagethinly sliced chorizo (about 1 3/4 oz or 50 grams)
  • Salt, pepper
  • 1 pinchpaprika
  • Vieux Pané cheese (use as much as you like)

Steps

50 minutes
  1. 1

    Slice the leeks and sauté them in a skillet with a little olive oil until soft.

  2. 2

    In a bowl, mix the cornstarch with the eggs, then stir in the yogurt, and finally whisk in the milk. Season with salt, pepper, and paprika.

  3. 3

    Place the cooked leeks in a baking dish, then sprinkle with chopped chorizo.

  4. 4

    Pour the egg mixture over the top.

  5. 5

    Bake for 45-50 minutes in a preheated oven at 350°F (180°C). Halfway through baking, add slices of Vieux Pané cheese.
