Firstly, clean and wash the green amaranth leaves well.

Chop the leaves and set it aside. Assemble all the ingredients required to make “Green Amaranth Leaves Kadhi “.

Heat oil in a kadai. Add the fenugreek seeds and mustard seeds and saute until the fenugreek turns golden. Next add urad dal, cumin seeds and the roasted chana and saute until the chana turns golden. Add the dried red chillies and saute for few seconds.

Add the curry leaves and let it splutter. Now add the chopped green amaranth leaves and saute for few minutes.

Add the turmeric powder, chopped green chillies and the crushed ginger and garlic. Mix well and saute for 3-4 minutes on medium flame.

Add 50 ml water and mix it well.

Cover and cook for 3-4 minutes on low flame until perfectly cooked and all the moisture absorbed.

Add water to the whisked curd and whisk is once again. Add the salt and whisk it well.

Add the cooked green amaranth leaves to the curd and mix until well combined. Or you can add the curd to the cooked green amaranth leaves in the kadai and mix it well.

Healthy and Delicious Green Amaranth Leaves Kadhi is ready. Serve it with steamed rice or warm rotis.
