Lightly grease a non-stick baking sheet and set aside. Put the bread mix into a large mixing bowl. Stir in the sugar and salt

Beat together the oil, tomato puree and water. Stir into the bread mix along with the Basil. Mix to form a soft dough

Sprinkle the Parmesan on a clean, dry work surface. Knead the dough on the surface until the cheese is incorporated and the dough is smooth and elastic

Shape the dough into a large round and put on the prepared baking sheet. Cover with a clean tea towel and leave to rise in a warm place for about 35 minutes, or until doubled in size. Preheat the oven to 230 oC/ 450 oF/Gas 8

Using a sharp knife, cut a large cross on the top of the loaf. Bake in the oven for 20 - 25 minutes, or until golden and the base sounds hollow when it is tapped. Turn out the bread onto a wire rack and cool before eating
