Place the leftover cooked rice in a clean bowl. Add enough water to completely cover the rice.
Keep overnight
Cover the bowl and leave it at room temperature overnight for about 8–12 hours.
Chill in the morning
In the morning, gently mix the rice and transfer it to the refrigerator for a short time if you prefer it chilled. - 2
Season the Panta Bhat:
Transfer the rice along with some of its water into a serving plate or bowl. Add mustard oil, salt, chopped onion, and green chili.
Mix and serve:
Mix everything well and serve immediately with crispy fish fry. - 3
Serving Suggestion
Serve chilled or at room temperature with hot, crispy fish fry, moong bhorta, or chutney for a traditional and comforting meal.
