Festivals in India are incomplete without sweet boondi. These tiny sweet round balls are made of besan and dipped in sugar syrup. Lauki halwa is a sweet Indian dessert made with grated bottle gourd, milk, ghee, sugar and flavored with cardamom and nuts. I have made Colourful Sweet boondi which was served in lauki halwa bowl.

Festivals in India are incomplete without sweet boondi. These tiny sweet round balls are made of besan and dipped in sugar syrup. Lauki halwa is a sweet Indian dessert made with grated bottle gourd, milk, ghee, sugar and flavored with cardamom and nuts. I have made Colourful Sweet boondi which was served in lauki halwa bowl.
Steps

Peel off lauki(bottle gourd),
remove seeds and wash. Then grate them with grater. - 2
Heat ghee in a non-stick pan and Put grated lauki, cook on high flame.

Stir continuously and cook on high flame till water evaporate.

Add milk with green food colour and mix well.
- 5
Now add sugar and cardamom powder and cook till ghee starts separate.

When it becomes dry, switch off the flame.

Transfer in a greased bowl and place a small bowl on it, press and keep in fridge for 1 hour.

For Sweet Boondi, In a big bowl, take maida, corn flour, baking soda.

Add water, mix well and whisk it with wired whisker to make a lump free batter.

Divide the batter in 3 bowls and add green food colour in 1st bowl. Add orange food colour in 2nd bowl and keep the 3rd bowl as plain.

Heat oil in a wok. Keep a slotted spoon on wok and pour batter with a ladle on slotted spoon. The batter will turns in tiny round balls.

Fry all 3 colour boondi individually till crisp and golden, then remove from oil and put in a bowl.

Make a thick sugar syrup from sugar and water.

When it warms, add in fried boondi and mix well with spoon.

Remove lauki halwa from bowl and place in serving plate, put sweet boondi in it, garnish with chopped pistachios and serve.
