First of all, wash the green amaranth leaves with two to three times of water, clean and dry it then finely chopped it.

Now heat oil in a pan and add cumin seeds, when the cumin seeds are hot add asafoetida, immediately add finely chopped garlic and finely chopped green chillies and saute for a few times.

After that, add chopped onion slices to this and saute it on medium flame till it becomes a little soft.

Now add the chopped amaranth leaves to this and immediately cover the lid and cook on low gas flame for 2 minutes. After that, open the lid and mix with a spoon. Cook it for a while.

Now add salt, red chilli powder, coriander cumin powder and turmeric powder to this and mix well and cover the lid and cook on low flame for 5 minutes. Then after add garam masala and mix it very well.

Now our very delicious Green Amaranth Leaves Sabji is ready for serve. Serve it with phulka, roti or as a side dish with dal rice.
