Gnocchi with Oyster Mushroom and Winter Vegetables

Gnocchi (pronounced NYOW kee) are an Italian pasta made of flour, boiled and mashed Potatoes and the Eggs. However there are other variations too with Cheese, Herbs and Vegetables.
Potatoes were cultivated a lot in places like Northern Italy where the climate was best suited for them than the grains. And hence the idea of incorporating them in making Pasta was thus done. And Potato Gnocchi was eventually made out of cooked and mashed Potatoes.
The three main types of Gnocchi are Gnocchi di Patate, Alla Romana and Parisienne. The flours used can be those of Water Chestnut, Buckwheat, Semolina or a mix of these flours also can be used.

In this particular recipe that iam sharing today is a Vegetarian version by using Winter Vegetables in all it's glory. Fresh and crisp Vegetables are put to use by me along with Oyster Mushrooms. All in all it's a perfect choice on any day especially the Weekends with your whole family besides you along with some of your closest of friends, relatives or special guests. Enjoy it to the fullest. This scrumptious Gnocchi will surely sweep you off your feet.

Ingredients

25-30 minutes
6 servings
  • 500 gmGnocchi
  • 3-4 tbspOlive oil
  • 3-4chopped Garlic
  • 100 gmOyster Mushrooms
  • 1finely chopped Onion
  • 1 bunchchopped Green Onions
  • 1 1/2 tspSalt or to taste
  • 1 tspPasta seasoning
  • 1 tspWhite Pepper
  • 1/2 tspPaprika powder
  • 1 cupTomato sauce
  • 1 cupthinly sliced Green Capsicum
  • 1 cupthinly sliced Purple Cabbage
  • 1chopped Red Capsicum
  • 120 gmBaby Corn halves
  • 2-3 tbspchopped fresh Coriander or Parsley or Basil

Steps

25-30 minutes
  1. 1

    Boil water with little salt and oil. As soon as it's vigorously boiling, add gnocchi and cook until done. That's it. Drain and keep aside until use.

    In a cooking pot, heat oil and saute oyster mushrooms at first. After about 5 minutes of stir frying, add green onions, green and red capsicum, purple cabbage and baby corn halves. Saute all that on a low heat.

    Now add the paprika, half of salt, pasta seasoning and white pepper. Also add in the tomato sauce and cook on a low heat for a further 5-6 minutes or just until the veggies are done. Do not cook more as it is important that they retain the crunch.

    Finally add the gnocchi to the pot. Mix well. Cover and let it just heat up for about 4-5 minutes. That's all. It's absolutely done. Garnish with basil or chopped parsley or coriander. Serve it piping hot right away. Enjoy!
