Mix vegetable Pulao is an easy and flavoured royal recipe made with basmati rice, vegetables and spices. Vegetable Pulao (Vegetable Pulav) is a spicy rice dish prepared by cooking rice with various vegetables and spices. It is an ideal simple one-pot meal.

👉Wash peel and chop all vegetables in a colander. Chop cauliflower florets and carrots in small pieces.

Wash and soak rice for 15 minutes. Heat 1 tsp cooking oil in a pressure cooker. Add all khade masale -8 Black pepper seeds, 4 cloves, 2 cardamom, 1 cinnamon stick mentioned in ingredients and saute for 30 seconds. Add rice, salt turmeric powder and water and close the lid and pressure cook for 1 whistle and switch off the flame.

👉In a wok add 2 tb spoon cooking oil and shallow fry cauliflower florets carrots and peas and cook.

👉Now chop onion length wise and fry in remaining cooking oil.

👉Add remaining 1tb spoon cooking oil in the wok. Add cumin seeds and when cumin seeds splutter add tomato puree and saute for 30 seconds. Add Red chilli powder and pulao masala. Now add all vegetables and stir. Cover it with lid and cook for 5 minutes or till peas get soft.

👉Now open the pressure cooker.In a separate pan place 1 row of rice, then one layer of cooked peas, then onion, carrot and cauliflower, then again remaining rice, then a layer of fried onion.

👉Now place the lid and cook for another 5 minutes on low flame. Switch off the flame. Open the lid after 5 minutes.

👉Serve it hot.
