California Farm Honey Roasted Carrot Sticks

I use my french fry cutter to make carrot sticks from thick large winter carrots, one carrot per person, sticks are 3” long and 1/2” thick. No peeling, just scrubbing. Soak the sticks in salt water, rub dry in a kitchen towel, coat with olive oil, drizzle wildflower honey over and and sprinkle white pepper.

Ingredients

Roast till thickest sticks are tender, about 30 mi
2 people
  • 1large wintercarrot per person, scrubbed, unpeeled, cut in 3” pieces, cut in 1/2” thick sticks
  • Salt water
  • Spray of olive oil
  • Drizzle of wildflower honey
  • Sprinkle of white pepper
  • Equipment: french fry hand cutter, 6” x 6” baking dish
  • Cost: 25 lbs. winter carrots $7.50, 30 cents a pound, 10 cents a piece

Steps

Roast till thickest sticks are tender, about 30 mi

    Scrub, cut carrots 3” long, run through hand french fry cutter

    Cover carrot sticks with salted water till ready to roast. Rub dry with kitchen towel, lay in baking dish, spray with olive oil, drizzle wildflower honey over, then sprinkle with finely ground white pepper.

    Preheat oven to 350F degrees, bake till thickest carrot sticks are tender, about half an hour. Enjoy.
