This is a winter delicacy made using 2-3 types of millet flour. It is often made in winters when green garlic is amply available.
These dumplings are very tasty & can be used in making a variety of delicious winter delicacies like Tavo Chapdi, Green Undhiyu, Saurashtra style Undhiyu, Dana Muthiya or Papdi Muthiya vegetable. These winter vegetables are tongue tickling & soothing to the palette without which Gujrati household is incomplete. It can also be relished as a starter or at tea time.

Ingredients

30 minutes
Makes 15-20 pcs
  • 1/4 cupcoarse wheat flour
  • 1 tspoil (moin for dumplings)
  • 1/4 cupSorghum flour (Bajra)
  • 1/4 cupcoarse besan
  • Salt to taste
  • 1 pinchturmeric powder
  • 1 tspred chilli powder
  • 1 tspcoriander- cumin seeds powder
  • 1/2 tspRajwadi Garam Masala (Badshah)
  • 1/4 tspasafoetida
  • 1/2 tspsesame seeds
  • 1/2 tspginger paste
  • 1/2 tspfresh green garlic finely chopped or dry garlic paste
  • 1/4 tspsugar
  • 1 tspchopped coriander
  • 1/2 cupFenugreek leaves (methi) finely chopped
  • 1 tsplemon juice
  • 1 pinchcarrom seeds
  • Oil for deep frying

Steps

30 minutes
  1. 1

    In a bowl, take coarse wheat flour, add 1 tsp oil & mix very well with finger tips.

    Clean,wash & cut fenugreek leaves, coriander leaves & green garlic.

    Add everything in the bowl, slowly add water & make a little stiff dough.

    Make equal size balls from the dough, using greased hands.

  5. 5

    Deep fry them, few at a time. Do not turn immediately. When they are fried a little, turn them. Fry them light brown. Remove & cool them completely. Use as required or serve them as tea - time snack.
