Ingredients

Eggs 4 separated
3/4 cupCastor sugar
Rind and juice of 2 oranges
Rind and juice of 1 lemon
Generous 1 cup ground almonds
21/2 tbspSelf_raising flour

Steps

Beat the whites till stiff.

Mix together almonds and both the juices.

Beat yolks,sugar and rind of both the fruits.

Beat almond mixture and flour in yolk mixture.

Combine whites and yolk mixture together.

Pour the mixture in a round greased pan.

Bake for 35-40 minutes or till done at 180 C.

Leave the cake to cool completely.

Top with toasted almond slices and confectioner's sugar.

Slice and serve.
