Add the Parmesan, Pecorino, pine nuts, garlic (if using), and 3 1/2 tablespoons olive oil (50 ml) to a blender. Blend until you get a creamy mixture.

Transfer the cheese and pine nut mixture to a container. Place the chopped arugula in the blender, blend, then add the remaining 1/2 cup olive oil (100 ml) and blend again until the mixture is thick but creamy.
