In a bowl, mix the cream cheese with lemon zest, salt, pepper, and chopped chives.

Lay out the bresaola slices. Place a tablespoon of the cheese mixture in the center of each slice. Lightly moisten the edge of the bresaola with water. Fold the slice in half and shape it like a ravioli. Repeat with all the bresaola slices.

Optional: Place the ravioli in an air fryer and cook for 5 minutes to make them crispy.

Top the bresaola ravioli with chopped baby spinach, a drizzle of olive oil, and a few shavings of Parmesan cheese.
