Cut the king oyster mushrooms into chunks.

Chop the garlic, chili peppers, and ginger slices.

Stir-fry the chicken slices until slightly golden, then remove and set aside. Sauté the ginger and garlic in the pan.

Add the mushrooms and other aromatics, stir-fry, then return the chicken to the pan. Add sesame oil and soy sauce, stir-fry for 3-5 minutes, then cover and simmer for 5-10 minutes until the sauce thickens.
