Did you make pastiera and have some cooked wheat left over? Here’s a quick and easy recipe for these delicious croquettes—they’re just as good as the potato ones (and even easier...shhhh).
Steps
- 1
Place the cooked wheat in a colander and drain well.
- 2
In a large bowl, combine the wheat, Parmesan, one egg, salt, pepper, and chopped parsley. Mix well.
- 3
Take a handful of the mixture and shape it into a croquette. Cut the mortadella and provolone into strips, place a piece of each in the center of the croquette, and shape to seal.
- 4
Dip the croquettes in beaten egg, then coat with breadcrumbs. For extra crunch, you can double coat them.
- 5
Fry in hot vegetable oil until golden brown. Serve immediately!
