A traditional Gujarati sweet/delicacy that is made in Gujarati households during Festivities especially Holi.It is also known as. ' vedmi ' in Gujarati.
It is delicious & healthy as it is full of protein. The perfect puran poli making is an art by itself , which can be mastered over the years . It is rich in flavours & liked by the young & old alike .

Steps

Wash & Soak tuver dal in hot water for 30 minutes.

Drain the water & add fresh water.Now take the dal &1 cup water in a pressure cooker & take 5-6 whistles. Open the pressure cooker once the pressure is released. Take the dal in a pan. The dal will be mushy.

Mixture : Mix besan & melted ghee to a smooth paste. Keep aside.

Add the cooked dal mixture in a pan.Add sugar & mix very well to break any lumps if any.

Cook the dal mixture for 5 minutes on a high flame, stirring occasionally. Add the besan & ghee mixture.Now the dal mixture will start to thicken, so stir continuously or it will stick at the bottom. Cook for 7-10 minutes, stirring occasionally.

As shown in the picture below, if the slotted spoon stands erect in the centre of the mixture, consider that puran (stuffing) is ready. Switch off the gas.

Cool for 30 minutes.Than add cardamom & nutmeg powder.Mix & make equal size balls from it.

Note : You can store this puran poli mixture in an airtight container in the freezer for 3 months & use as required.You can also make puran polis & store it in the freezer in an airtight container. When you want to serve, just take it out & warm it in a microwave oven, serve.
