Ingredients for uppuma

Beat 2 cups of curd in a bowl. Add 2 cups of water and whisk. Soak poha in this for 10 minutes.

Heat ghee in a pan over medium heat. Add star anise. Then add cumin, cinnamon, cloves and cardamom and fry for a couple of minutes. Add urad, turmeric powder, chilies, peanuts, curry leaves, mint, and stir, Add ginger, garlic, onion and sauté, After sautéing well (4 minutes). Stir in javithri. Add bell pepper, sauté for a minute. Add the soaked poha and stir.

Add salt and stir. Reduce heat and cover and continue cooking over low flame for 5 minutes. Stir occasionally to avoid sticking. Add the butter and stir. Add chopped cilantro. Turn off the stove. Aromatic, flavorful, tasty aval uppuma is ready. Transfer to a serving plate.
