Cut the chicken thighs into bite-sized pieces. Cut the green onion into pieces about 1 to 1 1/4 inches (2–3 cm) long.

Thread the chicken and green onion pieces alternately onto skewers. Season with salt and pepper.

Heat a small amount of oil in a skillet over medium-low to medium heat. Arrange the skewers in the pan and cook on both sides. For a nice char, increase the heat to high at the end and sear briefly. Arrange on a plate and serve.
