I wanted a light breakfast sandwich, but when I opened the fridge, I found chicken thighs. So, I decided to make a more filling sandwich.

To ensure the chicken thigh cooks quickly, slice open the thick parts with a knife. Poke holes in the skin with a fork.

In a frying pan with olive oil, place the chicken skin-side down and cook over medium heat until browned.

Wash the green leaf lettuce and tear it into pieces once crisp.
Mix all the ingredients marked with ● together.

Once the chicken skin is browned, flip it over. Crack the egg into the open space in the pan and reduce to low heat.

Lightly toast the bread and spread mayonnaise on one side.

Once one side of the egg is set, flip it over briefly and then remove it from the pan.

Add the mixed seasonings from step 3 to the pan, cover, and cook the chicken through. Once cooked, remove the lid and reduce the sauce.

Layer the toasted bread with lettuce, egg, and chicken, then top with the other slice of bread.

Press down firmly and cut the sandwich in half with a bread knife to serve.
